Method
Preparation: rinse the potatoes4, peel, boil in salted water until tender, approximately 20–25 minutes over medium heat; check doneness with a fork, then cool and cut into cubes 1–1.5 cm in size. Boil the eggs5 hard, peel, cool, and cut into cubes about 1 cm.
Rinse the cucumber3, peel if desired, and dice 0.5–1 cm; dice the sausage into 0.5–1 cm cubes; rinse the green6 onions and finely chop as well.
In a large bowl, add the diced potatoes4 and eggs5, then the cucumber3, sausage, and green6 onions; mix gently.
Season: salt to taste, add mustard and mix well so all ingredients are evenly combined.
Pour in the kefir1 cooled to cold temperature; mix and, if needed, dilute the kefir with water to the desired consistency.
Cover and chill for 10–15 minutes before serving; serve cold with dill7; you can accompany with slices of rye bread or boiled young potatoes4.
Tips
- Why it works
- Cool the boiled potatoes and eggs before cutting to prevent the soup from turning warm and losing its refreshing quality. Use a fork to test doneness—it should slide in smoothly without resistance.
- Substitutions
- Replace boiled sausage with 60g of cooked ham or smoked salmon for a different flavor. Use 100g of radishes instead of cucumber if you prefer a sharper taste.
- Common mistakes
- Over-salting the soup before adding kefir—it will make the dish too salty and unbalanced. Taste after mixing all ingredients and adjust carefully.
- Storing and reheating
- Keeps for 2 days in the fridge; stir well before serving cold. Do not freeze—kefir separates and texture changes.
- Serve with
- Pair with slices of rye bread and a side of pickled vegetables for a hearty lunch. Works well after a light breakfast or as a midday meal.
