Method
Rinse the peas, peel the potatoes2 and carrots3; dice the potatoes into 1 cm cubes and the carrots into 1 cm cubes; heat a pot over medium heat.
Put the peas in a pot with 500 ml water, simmer over medium heat for 40 minutes until the peas are soft, stirring occasionally.
Add the potatoes2 and carrots3 to the peas, continue simmering over medium heat for 15 minutes until the vegetables are soft.
Remove from heat, blend until smooth, return to the pot, add a little water if needed to reach desired consistency.
Add butter6 and cumin, salt to taste, stir and simmer over low heat for 2 minutes until the butter melts and the spices release.
Toast the bread in a dry skillet until golden and crispy; no slicing is required.
Ladle the soup into bowls, top with croutons, serve hot; garnish with fresh herbs if desired.
Tips
- Why it works
- Simmer peas first to break down their skins and release starch, which thickens the soup naturally without extra flour. Overcooking turns them mushy and slimy.
- Substitutions
- Use 50g frozen peas (thaw first) or swap cumin for ½ tsp smoked paprika. Replace butter with 10g olive oil if needed.
- Common mistakes
- If the soup tastes bitter, you overcooked the peas. Check for a dark green tint or burnt smell after 40 minutes.
- Storing and reheating
- Keeps 4 days in the fridge; reheat gently on low heat, stirring, until hot. Croutons crisp best fresh but can be toasted again.
