Method
Prep: gather ingredients—cottage1 cheese, egg, sugar, salt, flour; place cottage cheese in a large bowl, add egg, sugar, salt, and flour; mix gently until a thick, smooth dough forms.
Shape: roll dough into a thick sausage, then cut into 2 cm (¾-inch) pieces; place on a work surface, dusting lightly with flour if needed.
Boil: add dumplings to a large pot of boiling water; simmer 3 minutes after they float, until tender—they should hold shape with a slightly firm, creamy center.
Drain & finish: lift dumplings from water, return to the pot over low heat; stir in butter5 until melted and the dumplings glisten, about 1–2 minutes.
Serve: plate hot, drizzling with sour6 cream to taste; garnish as desired.
Make-ahead: shape dough and roll into logs up to a day ahead; store in the fridge. Cook and finish just before serving to keep them tender.
