Método
Prepara una sartén de buen tamaño (diámetro 28–30 cm) y una bandeja para hornear; precalienta el horno a 200 °C; sala y pimienta el costillar al gusto.
Dora el costillar en mantequilla por todos lados a fuego medio, aproximadamente 4 minutos, hasta que quede dorado.
Unta la carne con mostaza y luego reboza en pan rallado con romero picado y ajo, para que el recubrimiento se adhiera a todas las zonas.
Coloca el costillar en la bandeja y hornea a 200 °C sin cubrir, aproximadamente 15 minutos, hasta que el centro esté rosado.
Saca del horno, deja reposar 5 minutos y luego corta entre las costillas para servir.
En la misma sartén, saltea los espárragos a fuego medio durante unos 3 minutos, salpimenta al gusto, hasta que estén tiernos con un ligero crujido; sirve junto al costillar.
