Method
Separate the yolk from the white—use only the yolk for the custard. Mix it with sugar, vanilla sugar, and cornstarch.
Heat the milk1 almost to a boil, then slowly pour it into the yolk mixture while whisking constantly.
Return the mixture to the saucepan and cook over low heat for 5–7 minutes until thickened, without letting it boil.
Remove from heat and stir in the butter6 until smooth.
Divide the custard among glasses, then top with thawed berries.
Chill for 20 minutes or serve warm when the custard holds its shape on a spoon.
Tips
- Why it works
- Желток смешивают с сахаром и крахмалом заранее, чтобы они равномерно растворились и не образовали комков при нагревании. Если не размешать тщательно, крем будет комковатым и не будет загустевать.
- Substitutions
- Замени ванильный сахар на 1 ч. ложку ванильного экстракта или 1 стручок ванили, разрезанный вдоль. Вместо крахмала возьми 12 г кукурузного крахмала — эффект тот же.
- Common mistakes
- Если крем не загустевает, значит, ты довел его до кипения или недостаточно помешивал при добавлении молока. Он должен быть густым, но не резиновым, и держаться на ложке.
- Storing and reheating
- Храни в холодильнике 3 дня, закрыв стаканы пленкой. Разогревай в микроволновке 20 секунд, добавив 1 ч. ложку воды. Не замораживай — структура испортится.
- Serve with
- Подавай с чаем после обеда или ужина, когда хочется чего-то легкого и сладкого. Дополни свежими ягодами или взбитыми сливками.
