Method

  1. Prep: wash the potatoes2 and carrots3, boil in their jackets until tender, then cool. Hard5-boil an egg and cool it.

  2. Peel the boiled potatoes2 and carrots3 (if needed) and grate them coarsely into separate bowls for even texture.

  3. Grate the egg white on a fine grater and the yolk separately on a fine grater; keep them separate.

  4. Mash the saury with a fork, mixing in the onion6 until smooth, season with salt to taste, and stir well.

  5. Layer the salad: spread a layer of potatoes2 on a dish, lightly season with salt, and spread with mayonnaise.

  6. Add a layer of mayonnaise, then the mashed saury with onion6, followed by a layer of cheese, then a layer of carrots3.

  7. Top with a layer of egg white, then more mayonnaise, and finish with a layer of egg yolk.

  8. Chill the salad in the fridge for one hour to let the layers soak and set.

  9. Serve: remove the salad, cut into portions, and serve on a plate with bread slices or garnished with greens. Optional: decorate with fresh herbs.

Tips

Why it works
Boil potatoes and carrots in their jackets to keep them from turning mushy when grated later. Peel only after cooling to avoid sticking.
Substitutions
Use Greek yogurt mixed with lemon juice for mayonnaise (reduce by 10g for thickness). Replace saury with canned tuna (drained, 80g).
Common mistakes
Overmixing the saury paste makes it grainy; stop when it’s smooth but still slightly textured. Notice by seeing lumps or a dry consistency.
Storing and reheating
Keeps 2 days in the fridge. Reheat slices in a dry pan for 3–4 minutes per side to crisp layers. Do not freeze.
Serve with
Pair with warm rye bread and cucumber slices for a simple dinner. Serve as a side with grilled chicken or fish.
