Method
Peel and rinse the onion2; cut it into half-rounds about 0.5 cm thick.
Pour water into a pot of about 3 L; bring it to a boil over high heat; salt the water to taste.
Drop frozen vareniki into the boiling water and boil 7 minutes after it returns to a boil; check doneness by the dumplings floating to the surface and the dough being soft.
Melt butter3 in a pan about 24 cm in diameter over medium heat; fry the onion2 until golden, about 5–7 minutes.
Remove the vareniki from heat, drain the water, and return them to the pot or onto a plate.
Transfer the vareniki to the onion2 in the pan, stir over low heat for 1–2 minutes to let the onion flavor the dumplings; salt if needed.
Remove from heat and serve the vareniki with sour4 cream; garnish with herbs if desired.
