Classic cold salad: beets, potatoes and carrots with sauerkraut, cucumbers and onions, served with salted herring. Vegetables are boiled separately and combined just before serving.

Method
Wash the beets1, potatoes2 and carrots3; peel them; dice into 1 cm cubes; set up a pot of at least 3 liters and bring water to a boil over high heat.
Boil the beets1: boil beets in boiling water over medium heat for 25–30 minutes until tender; pierce with a fork — it should go in easily; drain and cool.
Boil the potatoes2: boil potatoes in boiling water over medium heat for 15–20 minutes until tender; test with a knife — the area should offer no resistance; drain and cool.
Boil the carrots3: boil carrots in boiling water over medium heat for 15–20 minutes until tender; test with a fork; drain and cool.
Dice the cooled beetroot1: dice the cooled beetroot into 1 cm cubes and briefly sauté in a skillet with a small amount of oil for 2–3 minutes until lightly golden and not staining the other ingredients.
Combine the vegetables: combine the cooled diced beets1, potatoes2, carrots3, cucumbers and sauerkraut6 in a salad bowl; add the onion7 and toss gently to preserve the shape of the vegetables.
Dressing and salting4: salt to taste and dress with vegetable oil or, if desired, an oil-and-vinegar dressing; toss gently until the dressing is evenly distributed.
Serve: serve the salad with slices of herring; garnish with greens if desired; let it rest for 10–15 minutes before serving.
Tips on substitutions and prep: substitute cucumbers with seasonal fresh tomatoes if available; prepare vegetables in advance and refrigerate until serving; add salt4 and dressing at the final stage.
