Procedura
Consigli
- Perché così
- Keep the heat low to avoid boiling—boiling evaporates alcohol and makes the spices bitter. Use a thermometer if unsure; 75°C is just below a rolling boil.
- Sostituzioni
- Use 10g brown sugar if no honey, or swap cardamom for 0.1g allspice. Skip apples if unavailable, but add 10g grated ginger for extra warmth.
- Errori comuni
- Overheating turns the wine cloudy and sharp; check by tasting—it should smell sweet and spicy, not burnt or metallic.
- Conservare e riscaldare
- Drink fresh or refrigerate for 1 day; reheat gently in a pot to 70°C. Freezing ruins texture and flavor.
- Servire con
- Pair with dark chocolate squares or spiced nuts for a holiday snack. Serve in small mugs at gatherings with cheese boards.
