Method
Preparation: rinse chickpeas in cold water and pat dry; peel garlic4; juice the lemon3 thoroughly; cut vegetables into sticks 6 cm long and 1.5 cm wide.
Hummus preparation: place chickpeas, garlic4, lemon3 juice, cumin, salt and oil in a blender; blend on low speed 1–2 minutes until smooth.
Bringing to creamy consistency: if needed, add cold water in small amounts and continue blending until creamy and smooth.
Move to blending: scrape the mixture from the sides of the blender and blend again for 15–20 seconds until uniform and glossy.
Serving: transfer the hummus to a plate and surround with vegetable sticks; you may lightly sprinkle cumin on top.
Serving and storage: serve immediately or store in an airtight container in the fridge for up to 2 days.
Tip for choice: replacing lemon3 juice with apple–grape vinegar is not recommended; you can use other vegetables on sticks to taste.

- Why it works
- Blend chickpeas on low speed first to avoid splattering oil. Increase speed only after they’re broken down.
- Substitutions
- Use Greek yogurt (100g) instead of lemon juice for tanginess, but reduce oil to 5g. Swap celery for fennel (40g) for a sweeter crunch.
- Common mistakes
- Hummus turns grainy if overblended after adding water. Stop when smooth, not thick. It’ll thicken as it sits.
- Storing and reheating
- Keeps 2 days in the fridge. Reheat hummus in a microwave for 30 seconds, stirring halfway. Eat veggies fresh.

- Pair with warm pita bread or whole-grain crackers for a balanced snack after lunch or before dinner.
