Method
Peel the potatoes1, cut into even chunks, cover with cold salted water, and boil for 20–25 minutes until tender.
Heat the milk2 with the butter3 in a saucepan—cold milk makes the mash gray and gluey.
Drain all the water, let the potatoes1 dry on the stove for 1 minute off heat.
Mash with a potato1 masher (not a blender—it’ll turn gluey), stir in the hot milk2 and butter3, add nutmeg, and whip with a spoon until fluffy; season with salt to taste.
