- 1 Pork ribspack 1 kg ≈ $8.00 500 g
- 2 Ketchup 40 g
- 3 Honey 15 g
- 4 Mustard 10 g
- 5 Soy sauce 10 ml

Method
Preparation: rinse the ribs under cold water, pat dry with paper towels, rub with salt, paprika, and dried garlic. Cut into portions and place in a heatproof dish about 30×40 cm. Cover the dish with foil and preheat the oven to 160 °C.
Cooking under foil: bake covered at low heat for 2 hours, until the meat is tender and nearly separating from the bone.
Sauce: in a small bowl mix ketchup, honey, mustard and soy sauce until smooth.
Glazing and final bake: uncover the foil, brush the ribs with the sauce and return to the oven without a lid. Increase the temperature to 220 °C and bake 15 minutes until a sticky crust forms.
Coleslaw: wash the cabbage, peel and trim the carrot10.
Slice the cabbage into fine shreds and the carrot10 into thin strips.
Combine the shredded cabbage and carrot10 in a bowl, add mayonnaise and a pinch of salt, mix until evenly distributed.
Serving: let the ribs rest for 5 minutes, cut along the bones and serve with coleslaw.
Tips
- Why it works
- Pat ribs dry before seasoning so salt sticks to the meat instead of dissolving into water. Wet ribs will taste bland and stick to foil.
- Substitutions
- Replace honey with brown sugar (15g) for a deeper caramel flavor; swap dried garlic for 1 fresh clove minced finely.
- Common mistakes
- Overcooking ribs in the final step turns the sauce bitter and the meat dry. Check when the crust is glossy, not blackened.
- Storing and reheating
- Eat fresh or within 2 days. Reheat ribs at 180°C for 10 minutes covered with foil; coleslaw keeps 3 days but tastes best fresh.
