Neapolitan Cold-Fermented Dough
A long cold ferment yields a stretchy base with a puffed, airy crust edge. This recipe makes one 30cm (12-inch) unbaked base.

- 1 Wheat flour 160 g
- 2 Dry yeast to taste
- 3 Salt 3 g
- 4 Olive oil 5 ml

Method
Mix the flour, yeast, and salt, then add 105ml cold water and the oil. Knead into a sticky dough for 8–10 minutes until smooth.
Cover the bowl and let rest at room temperature for 30 minutes to hydrate the flour.
Fold the dough from edges toward the center 4–5 times, then place it in a container and refrigerate for 20 hours.
Remove the dough, let it warm for 1 hour, then divide into 250g balls, rolling each gently without tearing.
Preheat the oven with a pizza stone or tray to maximum heat for 30 minutes.
Stretch the ball by hand from the center outward, leaving the crust edge puffed, then bake with toppings for 6–9 minutes until speckled golden.
Tips
- Why it works
- Тесто складывают и убирают в холод, чтобы замедлить брожение и развить глютен для эластичности. Если не дать отдохнуть в холодильнике, тесто порвётся при растягивании.
- Substitutions
- Масло оливковое замени на топлёное сливочное — 5 г, тесто будет плотнее. Дрожжи свежие — 1.5 г, раствори в тёплой воде перед замесом.
- Common mistakes
- Тесто не растягивается — значит, не отлежалось в холодильнике или слишком рано достали. Оно будет тугим и рваться при раскатывании.
- Storing and reheating
- Храни в холодильнике 3 дня, завернув в плёнку. Размораживай при комнатной температуре 1 час, затем выпекай с начинкой. Не замораживай.

- Подавай с томатным соусом и сыром моцарелла на обед или ужин, когда хочется лёгкой, но сытной закуски.
