Method
Wash the cabbage, shred it into thin 0.5 cm strands, pour over with boiling water and wring out; prepare a nonstick skillet 20–24 cm in diameter and heat it over medium heat.
In a bowl, mix the chicken mince, cabbage, grated onion3, egg, semolina5 and salt; let stand 10 minutes for the semolina to swell.
Shape the patties about 5 cm in diameter and 1.5 cm thick, and keep their shape firmly.
Fry the patties in medium heat for 4 minutes on each side until golden brown, turning carefully.
Reduce the heat to low, cover, and simmer for 5 minutes until cooked through; when done, remove from heat and let them rest on a plate under the lid.
Serve the cutlets with sour6 cream; you can serve with any side dish as desired.

- Why it works
- Boil and wring the cabbage to remove bitterness and excess water, which prevents soggy cutlets. Use medium heat to brown evenly without burning.

- Replace semolina with 15g breadcrumbs for a slightly denser texture. Use 30g Greek yogurt instead of sour cream if preferred.
