Georgian food looks like restaurant food until you read the shopping list: suluguni, cilantro, walnuts, khmeli-suneli, beans and eggplant are in any supermarket. Here are fifty-nine dishes, each with time, calories and a price per serving at your store's prices. Four khachapuri, from the lazy lavash one to the Adjarian boat, khinkali with meat, cheese and mushrooms, kharcho and chikhirtma, chashushuli and chakapuli, satsivi and chicken in bazhe, pkhali of beetroot, beans and spinach, lobio and ajapsandali, churchkhela and gozinaki.

Below are six ready weeks. "First steps" is the six best-known dishes, "30-minute dinners" for weekdays, "Feast" for eight guests, "No meat" on beans, nuts and cheese, "Soups" from kharcho to bozbashi, "Baking" with khachapuri, kubdari and mchadi. Cómo usarla

Press "Build a week from the collection": the planner puts Georgian dishes on lunches and dinners, adds breakfasts to match your answers and builds a shopping list in whole packs. Cilantro, walnuts, suluguni and khmeli-suneli repeat in half of the recipes, so they get used up within the week.

Grind the walnuts for satsivi, bazhe and pkhali for all the dishes at once and keep them in a jar. Take a milder suluguni for khachapuri, or the dough turns too salty. Chop cilantro at the last moment; in stews it goes in a minute before the pot comes off the heat. Make khinkali in a big batch and freeze them: they boil straight from the freezer.

Which Georgian dishes can I cook at home?

Start with the First-steps week: Imeretian khachapuri, kharcho, chakhokhbili, lobio, beetroot pkhali and satsebeli. All of them are made in a skillet and a pot from ordinary supermarket products, and suluguni and khmeli-suneli are in any store.

What Georgian dish is quick to make?

Skillet chicken with tomatoes and cilantro in 30 minutes, gebzhalia in 15, mushrooms with suluguni in 20, shechamandi in 20, lazy lavash khachapuri, salad with walnut dressing in 15. The 30-minute dinners week is made of such dishes.

What can replace Georgian ingredients if I cannot find them?

Suluguni can be replaced with Adyghe cheese plus mozzarella, matsoni with thick yogurt or kefir, tkemali with sour plums or tomato paste with lemon, tarragon with mint. Khmeli-suneli and cilantro have no substitute, but they are sold everywhere.

What Georgian food is there without meat?

Lobio and lobiani, pkhali of beetroot, beans and spinach, ajapsandali, khinkali with cheese and mushrooms, elarji, gomi, eggplant with walnuts and pomegranate, potatoes in walnut sauce. The No-meat week is six such dishes.

What can I cook for a Georgian feast?

Adjarian khachapuri, satsivi, mtsvadi, eggplant rolls, pkhali, lobio, churchkhela and gozinaki for dessert. Satsivi, pkhali and churchkhela are made the day before, khachapuri and the kebabs in the last hour. Set the number of guests in the servings counter of each dish.
